first prevailing on the second - while more acetates seem to be present in Silvaner w i n e s . N o i n t e r e s t i n g c o n t r i b u t i o n h a s b e e n f o u n d t o p o s s i b l e o f t e n r e p o r t e d p e a -chapricot scents by y- and ò-lactones, whose concentrations, evaluated through the G C S I M / M S t e c h n i q u e , d o n o t e x c e e d 5 p g / l - . F r e e m o n o t e r p e n o l s , l i k e l i n a l o o l , h o t r i e n o l a n d g e r a n i o l , c o u l d c o n t r i b u t e t o a f l o r a l s c e n t e v e n i n S i l v a n e r w i n e s , b e i n g t h e i r c o n c e n t r a t i o n s b e t w e e n a b o u t o n e t h i r d a n d o n e f i f t h o f t h e t h r e s h o l d l e v e l s , T h e p r o f i l e is s i m i l a r to t h o s e o f t h e c o n s i d e r e d R i e s l i n g a n d R i e s l i n g - c r o s s w i n e s , b u t g e n e r a l l y 1 O - f o l d l o w e r . A s f o r m o n o t e r p e n o l s a g l y c o n s , S i l v a n e r w i n e s c a n n o t b e d i s t i n g u i s h e d f r o m M ú l l e r - T h u r g a u a n d R i e s l i n g f o r t h e g e n e r a l q u a n t i t a t i v e l e v e l . T h e b o u n d f o r m s p r o -f i l e o -f -f e r s m o r e p o s s i b i l i t i e s . S o u t h T y r o l S i l v a n e r w i n e s a r e r i c h e r in g e r a n i o l a s w e l r a s i n u - t e r p i n e o l a n d i t s d e r i v a t i v e s li k e 2 - e x o - h y d r o x y - 1 , 8 - c i n e o l a n d p m e n t h l -ene-7,8-diol. More discriminant are the ratios between trans and cis furan linalool o x i d e s , t r a n s a n d c i s B - h y d r o x y - l i n a l o o l , a n d g e r a n i o l a n d n e r o l . I n s o m e c a s e s a n influence of the vintage on the level of some of those compounds was observed b u t t h e s i g n i f i c a n c e o f t h e q u o t e d r a t i o s w a s n o t c h a n g e d .

S i d i s c r i m i n a v a i n v e c e r i s p e t t o a l R i e s l i n g , q u e s t ' u l t i m o p i ù r i c c o s i a n e g l i o s s i d i d i l i n a l o l o c h e n e l h o d i e n -d i o l o l , m a c o n t e n o r i m i n o r i in g e r a n i o l o , n e r o l o e a - t e r p i n e o l o . R e c e n t i la v o r i h a n n o
tuttavia
evidenziato
una sensibile
influenza
delle condizioni
climatiche
nel
modifica-re quantitativamente
il livello
dei composti
monoterpenici
nei
"Pinot".
Dal confronto
fra l,areale
del Trentino-Alto
Adige e quello
tedesco
del Palatinato,
è emerso
che i
vini tedeschi
presentavano
tenori mediamente
anche di dieci volte superiori,
così
da far assurgere
alcuni
composti
a livello
di possibile
rilievo
organolettico
(Versini
ef
a\.,1994a).
Tali osservazioni
hanno stimolato
ulteriori
approfondimenti.

intende
indagare
sia i composti
primari,
in forma libera
e glicosidica,
che quelli
di
origine
fermentativa
di vini altoatesini
delle
varietà
Silvaner,
MÙller-Thurgau,
Riesling
renano
e Kerner
(Trollinger
x Riesling
renano),
quest'ultima
varietà
interessante
per
una aromaticità
riienuta-più
"moscatàta"
rispetto
al Riesling
stesso
(Hillebrand
et al',
1 984)
Materiali e metodi
Vini monovarietali
prodotti
in Alto Adige da cantine
rappresentative
della zona
nelle annate 1gg4 e 1g95 sono stati sotioposti
ad analisi
gascromatografica

Alcooli

L'alcool B-feniletilico si conferma piuttosto elevato per tutte le varietà, su valori di sicuro interesse olfattivo (Meilgaard, 1975; Nicolini et al., 1995) elipicizzanti; tale f a t t o e p r o b a b i l m e n t e r i c o n d u c i b i l e a d u n a c o m u n e l i m i t a t a p r e s e n z a d i a m m i n o a c i -d i n e i m o s t i . U n c o n t e n u t o -d e c i s a m e n t e p i ù r i -d o t t o - e c o r r i s p o n -d e n t e s p e s s o a prodotti da varietà diverse della stessa cantina * potrebbe essere messo in relazio-n e a l l ' i m p i e g o d i s a l i a m m o n i a c a l i i n v i n i f i c a z i o n e .

Lattoni
I lattoni
(tab. 1b) sono a contenuti
generalmente
molto bassi, inferiori
ai 5 pg/L
come ordine di grandezza
per quanto riguarda
il y-nonalattone,
ò-decalattone
e
ò-dodecalattone
ed anche agli 1 -2 ltglL per il y-deca e y-dodecalattone;
questi ultimi,
i più interessanti
per un possibile
apporto
di nota di pesca-albicocca,
sono tuttavia
presenti
a livelli
decisamente
inferiori
ai loro valori
di soglia
nei vini, rispettivamente
di ca. 50 e 10 ppb (Etievant
et al., 1983).
Si è effettuata
anche I'analisi
del
y-octalat-tone, tuttavia
la determinazione
di tale composto
non è potuta scendere
sotto i 5
Lig/L,
limite
analitico
massimo
anche
di una sua possibile
presenza
nei vini
conside-rati;
si conferma
quindi la sua non rilevanza
per un possibile
contributo
all'aroma.
I
dati riportati
concordano
con quelli
da noi rilevati
in un precedente
studio
sui vini da
macerazione
carbonica
(Versini
et al., 1984),
collocandosi
tuttavia
a livelli
inferiori
di
quelli
osservati
su Moscato
di Frontignan
da Etievant

Nei vini Riesling,
comun-que, anche i lattoni

sembrano
collocarsi

Composti

Tali composti,

più bassi che nelle
altre
tipologie
di vino in cui esaltano
