gastrointestinale. Fasi cefalica, orale ed esofagea della risposta integrata all’ingestione di cibo. Fase del piccolo intestino della risposta integrata
all’ingestione di cibo. Fase del colon della risposta integrata all’ingestione di cibo. Funzioni di trasporto e metaboliche del fegato. Regolazione ormonale del metabolismo energetico e dell’accrescimento. Metabolismo del calcio e del
fosfato. Funzioni nervose centrali: Ipotalamo. Ipofisi. Motivazione e
ricompensa. Dipendenza ed assuefazione. Controllo centrale della massa corporea e dell’alimentazione. Meccanismi della fame e della sazietà.

Acquisizione di conoscenze relative al funzionamento ed alla regolazione del sistema digerente, utilizzo fisiologico dei nutrienti nella dieta. Studio dei
fenomeni neurobiologici e psicofisiologici relativi al comportamento alimentare anche in relazione alle interazioni cognitive ed emotive fra il soggetto e
l’ambiente.

Gustin or carbonic anhydrase (CA) VI : The salivary hormone
• Gustin is a zinc- containing protein , that is released by the parotid gland in the human . It is the major protein of the parotid protein , as it forms 3% of the total protein of the mentioned gland. Each mol of gustin
protein contains 1 mol of zinc. Gustin has a 37KD a molecular weight. Its structure was found to be similar to that of Carbonic anhydrase VI .
Gustin is relatively absent in patients with hypogeusia . On the other hand , inhibition of gustin release was approved to cause gustatory buds abnormalities , so there was a hypothesis about the role of gustin as a growth factor for gustatory buds.It was shown lately that gustin directly on gustatory buds and olfactory epithelium , as a growth factor.
Decreased gustin in the nasal mucous is also associated with abnormal olfactory functions. Depleted zinc or zinc malabsorption were also
related to gustatory and olfactory loss.
Mechanism of action of gustin in gustatory buds and olfactory
epithelium growth is not known enough , but it is thought that it acts by a dual mechanism:
1- It activatescalmodulin dependent brain phosphodiesterase activity which related gustin to adenylyl cyclase and cAMP activity.
2- It has a similar effect to Nerve growth factor ( NGF) in a trophic pattern of action , not meiotic.
it acts via a paracrine pattern of action.
