FIORE E GLI ANTICHI DOLCI DI SIENA:

UNA STORIA AUTENTICA

Questa è la storia di una piccola spezieria, così erano chiamate un tempo le farmacie, che aveva un laboratorio nel retrobottega, dove sapienti Maestranze si adoperavano per continuare un’altra storia, molto molto più antica: portare avanti la preziosa, unica e assolutamente originale tradizione dolciaria senese.

FIORE AND THE ANCIENT SWEETS OF SIENA:

AN AUTHENTIC STORY

This is the story of a small apothecary, as the pharmacies were once called, which had a laboratory in the back of its shop, where skilled Maestranze worked to carry on another story, much older: handing down the precious, unique and absolutely original Sienese confectionery tradition.

Siamo nel 1827. L’Italia non era ancora nata e nella città di Siena erano rimaste in poche le Maestranze che custodivano gli antichi segreti dei dolci medievali, che venivano tramandati di generazione in generazione, sin dal 1200.

Nella Farmacia Fiore, in Via di Garibaldi, la passione per le spezie divenne anche passione per la ricerca e per la storia dei dolci senesi. Si cercarono, studiarono e catalogarono le poche ricette antiche rinvenute tra la polvere degli archivi.

Fortemente si vollero le poche Maestranze rimaste in città.

E fu così che nacque la Premiata Manifattura del Panforte Fiore.

TRADITION MEANS RESPECT. AND PASSION.

It’s 1827. Italy was not yet born and in the city of Siena there were only a few Maestranze who kept the ancient secrets of medieval sweets, which were handed down from generation to generation, since 1200.

In the Farmacia Fiore, in Via di Garibaldi, the passion

for spices also became a passion for the research and

history of Sienese sweets. They searched, studied and

catalogued the few ancient recipes found among the

dusted archives. The few Maestranze left in the city

were strongly desired. And so it was that the Premiata

Manifattura of the Panforte Fiore was born.

Da allora Fiore è parte stessa della cultura della città, non solo fedele custode della sua tradizione dolciaria, ma anche promotrice degli autentici tesori senesi divenuti, anche grazie a Fiore, famosi in tutto il mondo:

il Panforte, i Ricciarelli, i Cantuccini.

A MILLENIAL CULTURE IN THE WORLD

Since then, Fiore has been part of the culture of the city, not just as a faithful guardian of its confectionery tradition, but also as a promoter of the authentic Sienese treasures which, thanks to Fiore, have become famous all over the world: Panforte, Ricciarelli, Cantuccini.

TRAMANDARE VUOL DIRE SAPER INNOVARE Da due secoli Fiore non ha mai tradito il suo spirito artigianale e la minuziosa attenzione alla storicità e all’originalità delle ricette, diventando allo stesso tempo sinonimo di costante innovazione: nella ricerca della qualità, nella scelta e selezione degli ingredienti, nel processo di lavorazione, nel controllo della filiera e nel rispetto dell’ambiente. E del suo territorio con cui ha mantenuto, ieri come oggi, un legame identitario profondissimo.

For two centuries, Fiore has never betrayed its artisanal

spirit and meticulous attention to the historicity

and originality of the recipes, becoming at the same

time synonymous with constant innovation: in the

pursuit of quality, choice and selection of ingredients,

manufacturing process, controlling the supply chain

and respecting the environment. And its territory with

which it has kept a very deep identity bond yesterday

as today.

La terra di Siena è rimasta un luogo autentico, dove il tempo scorre ancora lento tra le mura dei borghi me- dievali ricchi di relazioni umane profonde. Dove l’intel- ligenza, la creatività e il rispetto sono ancora capaci di realizzare prodotti di altissima qualità. In questo luogo unico al mondo Fiore tramanda quel saper fare millena- rio degli antichi speziali senesi rinnovandolo e unendolo all’avanzare delle tecnologie più innovative attraver- so l’apertura del suo nuovo stabilimento aperto a metà dell’anno 2021, in cui possiamo toccare con mano e ve- dere da vicino il progresso che sta vivendo.

La passione e l’impegno è stata premiata: Fiore ha svol- to un ruolo determinate per ottenere il riconoscimento IGP (Indicazione Geografica Protetta) da parte dell’U- nione Europea per il Panforte e i Ricciarelli.

Siena è una delle poche città nel mondo ad avere tre prodotti IGP: la certificazione e il conseguente rigido disciplinare di produzione tutelano le Maestranze che da generazioni si tramandano un sapere unico che crea pro- dotti dolciari d’eccellenza, in un territorio d’eccellenza.

AND PROTECTED

The land of Siena has remained an authentic place, where time still passes slowly within the walls of medieval villages rich in deep human relationships. Where intelligence, creativity and respect are still capable of making products of the highest quality. In this unique place in the world Fiore has handed down that millennial know-how of the ancient Sienese apothecaries, renewing it and combining it with the advancement of the most innovative technologies through the opening of its new factory opened in the middle of the year 2021, where we can touch and see closely the progress he is experiencing.

Passion and commitment have been rewarded: Fiore has played a decisive role in getting the PGI (Protected Geographical Indication) trademark by the European Union for the Panforte and Ricciarelli.

Siena is one of the few cities in the world to have three PGI products: the certification and consequent strict production regulations protect the Maestranze which, for generations, have handed down a unique know-how that creates excellent confectionery products, in a territory of excellence. Where people have been at the core for millennia.

Le Copate.

Sono il dolce di Siena ideato dalle monache di un con- vento senese nel 1400, anche se il suo nome sembra provenire dal termine arabo “qubbaita” che tradotto in italiano significa “dolce mandorlato”, e ciò proverebbe che la sua storia inizia da molto lontano. Le Copate sono leggere sfoglie della stessa pasta del torrone tenero, racchiuse fra due cialde.

The Copate.

They are the sweet of Siena created by the nuns of a Sienese convent in 1400, even if its name seems to come from the Arabic term “qubbaita “, which translated into Italian means “almond cake”, and this would prove that its history begins from far away. The Copate are light pastry sheets of the same soft nougat dough, enclosed between two wafers.
