I risultati conseguiti appaiono di interesse, in particolare per quanto riguarda le performance in vivo che, non essendo state influenzate dal trattamento alimentare sperimentale, mostrano come la sansa vergine di oliva denocciolata sia da considerarsi un ottimo sottoprodotto nell’alimentazione dei giovani ruminanti, anche ad alti livelli di inclusione nella dieta (32,5% nel concentrato). Tali risultati sono poi confermati dalle performance alla macellazione e dalle caratteristiche fisiche delle carni anch’esse non influenzate dalle diete sperimetali. Tuttavia, il risultato che valorizza ulteriormente l’impiego della sansa quale vero e proprio integratore alimentare sta nella sua azione antiossidante, migliorando la shelf-life della carne, anche quando questa è prodotta da animali alimentati con diete ricche di acidi grassi polinsaturi. Tale aspetto assume un’ulteriore valenza se si considera che una delle strategie per migliorare il rapporto acidi grassi saturi/acidi grassi insaturi della carne a favore di quest’ultimi e incrementare il livello di CLA nella stessa, migliorandone così le caratteristiche nutrizionali, è proprio quello di aggiungere nelle diete destinate ai ruminanti fonti

di acidi grassi della serie n-3 quali appunto il lino. In conclusione dai dati raccolti ed analizzati si può prospettare la valorizzazione dei prodotti secondari della filiera olearia e la combinazione con altre filiere quali quella mangimistica e quella di colture alternative, come ad esempio il lino, volte al miglioramento delle caratteristiche nutrizionali e salutistiche degli alimenti di origine animale.
