personale tecnico che esegue le analisi. La tecnica, sicuramente più complessa dell’ELISA e
dell’analisi biomolecolare sul DNA, richiede un investimento significativo, che peraltro giustifica il
suo suggerimento come tecnica avanzata di “secondo livello” per la conferma di eventuali campioni
risultati positivi (o dubbi) alle analisi di screening e di prima valutazione della contaminazione.
Le sensibilità, sicuramente correlate alla strumentazione ma anche alla preparazione e clean up del
campione (effetto “matrice”) variano comunque da pochi nanogrammi ad alcuni mg/kg/L per
diverse matrici e diversi allergeni, come riportato in numerosi lavori scientifici. La sensibilità varia
chiaramente in funzione del rilevamento di una proteina intatta o di un peptide “marker”.
