3.2.6. DETERMINAZIONE QUANTITATIVA DEL TIROSOLO, IDROSSITIROSOLO, OLEOCANTALE E OLEACEINA IN CAMPIONI DI OLIO EXTRAVERGINE D'OLIVA.

Sono stati analizzati due campioni di olio di origine toscana, preparati come descritto precedentemente, applicando l'equazione ottenuta dalle rette di taratura dei singoli componenti fenolici e polifenolici dell'olio extravergine di oliva (tirosolo, idrossitirosolo, oleocantale e oleaceina ), è stato possibile determinare il loro contenuto espresso in mg, nei campioni di olio analizzati (Tabella 18) .
