Health and Vegetables
In America, scientists have found that different varieties of vegetables may naturally contain different amounts of health- enhancing compounds such as antioxidants or flavonols. The US Agricultural Department looked at 71 varieties of broccoli and found that some contain many more cancer preventing compounds than others. This fact may mean that in future we don’t just shop for broccoli or tomatoes but seek out specific varieties for our health.
