Mixed Salads
An easy coloured and appetising course.
Refreshing and without calories, salads are no more to be considered as a simple garnish for dishes: they have become a true, necessary element in modern diets, because they are proved to contain fibers and antioxidants. So they have a fundamental role to play in the life of all of us.
Besides all that, salads give to housekeepers and cooks the possibility of creating many different menus, saving time and labour. No more heaps of dirty pans to be washed: a rich mixed salad will make everybody happy and satisfied, without straining.
Mixed salads may be done with raw vegetables, but also with boiled ones; they may be enriched with cheese, meat, eggs, fish and even fruit; so that, if salads give our body a satisfactory charge of vitamins, proteins and other nourishing elements are supplied by the food used to season them.
When we buy salad, we must control that it is fresh and perfumed and its leaves must be crisp and unspotted, with clear and unbroken edges. We must wash it really carefully under running water, then we must take external leaves away, cut the internal ones into pieces, or better, tear them by hands, and drain them. Well seasoned with salt, oil, vinegar or with sauces and enriched with whatever we prefer, our mixed salad will reach our table offering the glorious range of its colours and tastes.
