RIASSUNTO Parole chiave: ocratossina, micotossine, mangimi, tossicità, alimenti L’Ocratossina A (OTA) è una micotossina prodotta da miceti che si sviluppano su vari substrati in particolare vegetali sia in campo che durante le loro trasformazioni, e lungo tutta la filiera. L’OTA riveste particolare importanza nei confronti degli animali di interesse zootecnico; sebbene sia crescente l’attenzione anche sugli effetti di questa micotossina negli animali da affezione. L’OTA rappresenta un rischio anche per l’uomo sia attraverso il consumo di alimenti vegetali sia di alimenti di origine animale. Questi ultimi possono presentare sia una contaminazione diretta sia una contaminazione indiretta dovuta al fenomeno del carryover ovvero il trasferimento dell’OTA dai mangimi ai tessuti degli animali a cui è stato somministrato il mangime contaminanto. Le Autorità sanitarie e scientifiche per la sicurezza alimenater cercano di affrontare il problema con maggior attenzione data l’importanza che questa tematica sta assumendo in termini di sanità pubblica. Il problema micotossine dovrebbe coinvolgere diversi tipi di competenza (agronomiche, tossicologiche, economiche) al fine di monitorare la contaminazione e ridurre i rischi tossicologici ad esse correlati.

Ocratoxin A (OTA) is a mycotoxin produced by molds that develop on various substrates, in particular plant, both in the field and during their transformations. OTA is of particular importance for food producing animals; although attention is also drawn to the effects of this mycotoxin in companion animals. OTA is also a risk for human both through the consumption of vegetable foods and animal derived food. The latter may present both direct contamination and indirect contamination due to the carryover phenomenon, or the transfer of the OTA from feed to the tissues of the animals to which the contaminated feed was administered. Health and Safety Authorities seek to address the issue with greater focus because of the importance this theme has to address in terms of public health. The mycotoxin problem should involve different types of expertise (agronomic, toxicological, economic) in order to monitor contamination and reduce the toxicological risks associated with them.
